When I was in college, I pretty much lived on Ramen noodles and eggs. This is my crazy concoction blending the two lovable staples. First, cook the Ramen noodles in the broth until they are about half way done, remove them from the liquid and drain off as much moisture as possible. Using a non-stick saute pan, over medium high heat, add a bit of butter and olive oil. Add the noodles to the hot pan and let them get golden, then beat a few eggs and pour them over the top of the noodles. The eggs will flow throughout the curly noodles creating the omelette. I added some chorizo and grated cheese, with a bit of tomato and green onions, but feel free to add whatever you like. Once the eggs have cooked for about 2 minutes, gently fold the omelette in half, you will notice the egg on the inside will spill out a bit, thats ok. Cook for another minute or so, then serve. Garnish with a bit more cheese and goodies. This is the ultimate dude delicacy. I hope you guys dig it!
