Lots of mushroomsLots of mushrooms I had some oyster mushrooms leftover from the other day and I wanted to do something fun and different. I grabbed some Portobellos, a few more shiitakes and a bit of cream. I had this cool idea to do a mushroom dish, but truly articulate the different natural characteristics and flavors. Mushrooms are one of my favorites and I have been wanting to play with them for awhile now. The first thing I did was... Take a portobello and slice it nice and thin and line them out on a silpat or non-stick sheet pan. Pop the pan into a 200 degree oven for about an hour. Flip the portobello slices ever 10-15 minutes until they are dry and crispy. Dehydrate PortobellosDehydrate Portobellos Shiitakes in the grinderShiitakes in the grinder Once the are finished, throw them in a spice or coffee grinder with some add some kosher saltadd some kosher salt kosher salt and zap em'. The aroma is so bright with the nutty aroma of the earth found in the mushroom. Slice a handful of shiitakes and add some heavy cream with a touch of salt and pepper and simmer for 30 minutes. Portobello SaltPortobello Salt Allow the shiitakes to release all of their flavor into the cream. Pour the steamy mushroom cream into a food processor and blend until the cream shiitake mushrooms creamshiitake mushrooms cream is smooth but still with bits of shiitakes visible. In a non stick saute pan that is screamin' hot, add 1 of the beautiful little oyster mushroom clusters with the gills and face down in the oil. mmmm... so goodmmmm... so good Allow the cluster to caramelize golden and gorgeous. I started my plate with a bit of the Shiitake Cream, then added the caramelized Oyster mushroom, garnished with a bit of the Portobello Salt and blend it until its smoothblend it until its smooth 2 delicate pieces of the dehydrated slices as well. I absolutely love this little dish. It show off all of the wonder the mushroom has to offer. Nutty, sweet, earthy, salty, savory (SAVORY for sure!) it is hearty and delicate at the same time.
