Mango Avocado Salsa with Lime Crisps

Mango Avocado Salsa

Ingredients: 

Salsa:
3 Haas avocadoes, not too soft
1 mango, peeled, small dice
1 lime juiced
½ red onion, chopped small
2 tablespoons of garlic, chopped
1 jalapeno, chopped small
1 tablespoons Avocado oil (you could substitute olive oil if you need to)
salt and pepper

Lime crisps:
You could buy some tortilla chips already made and toss with a bit of lime juice and salt

-OR-

1 small package of soft flour tortillas (about 12 tortillas), cut into wedges
½ gallon vegetable oil
2 tablespoons of salt
1 lime, juiced

Instructions: 

1. Slice avocadoes in half lengthwise and remove the pit. Using a small knife, make slices on the soft flesh side from top to bottom using the skin as a guide (Be careful not to pierce the skin). Turn the avocado and slice in the opposite direction (almost like a checker board) to create a diced effect. Using a large spoon, scoop the diced avocado out into a bowl

2. Add the mango, lime juice, onion, jalapeno, garlic and oil with a bit of salt and pepper and mix gently so you don’t break the avocado up and turn it into guacamole it should be chunky like salsa.
3. Allow this mix to sit in the fridge for about a ½ hour before serving and the flavors will come together and make some sweet food love!

For the crisps:

(If you have purchased some crisps already, simply sprinkle a bit of lime juice into a bit of salt to create a lime-flavored seasoning and sprinkle over your tortillas… )

1. In a tall but narrow pot, bring the oil up to 375 degrees F. It should be hot enough to make bubbles around a piece of soft tortilla So use a small piece to test your oil if you do not have a thermometer.

2. Carefully place the soft chips into your hot oil. Don’t fill the pot too heavily or the chips will get stuck together and won’t cook evenly. They only take a minute to cook…so don’t leave the pot!

3. Once they are crispy and golden, use a slotted spoon to remove from the pot and drain on paper towels. Season with salt and sprinkle with a little lime juice immediately.

To put it all together, serve a big bowl of salsa with a platter of chips or as individual portions. However you do it, everyone will love it. You might want to make 2 recipes if your friends like to eat, because this dish always seems to run out first.
